About Camellia sinensis

Although Camellia sinensis is usually sold in America only as green tea; in Yunnan, several varieties like Sword of Emperor, Misty Mountain, or Mao Feng may be found. Each of these teas: red tea, green tea, black tea, and white tea come from the same plant. While tea varieties are easy to distinguish the main classification for Camellia Sinensis is made according to the processing performed on the leaves.  These processes are used to achieve its conservation, oxidation and differentiation. Before starting the oxidation step, the leaves go through different phases that allow the removal of its natural moisture, oxidation occurs subsequently to the leaves exposed to high temperatures or direct sunlight. The leaves of green tea Yunnan are thicker compared to other varieties so it complicates the drying process giving the tea slight smoky notes. Extracted from wild leaves, this oriental tea is full of medicinal properties and is one of the best herbal teas for health.
